Biryani redefined

Smorgasbord Flavours combine to make a fine mélange of divine fare at D.V.Manor's Biryani Redefined, says P. Sujatha Varma

After a brief pause, the multi-cuisine restaurant of Hotel D.V.Manor, Aromas, is once again abuzz with hectic activity.

The unfolding of'Happenings-2005' in the most happening place of the city on Friday has begun to spin magic drawing people to the delightful food fare - Biryanis Redefined.

The fare offers an assortment of nearly 55 biryani delicacies ranging from zafrani murg dum biryani, mutton quorma biryani, prawn biryani, shalvamachili pulao, noorani biryani, bahar-e-chaman biryani, egg bhurji biryani, kachchi murg dum biryani, chilli prawn biryani and quail pudina biryani to name a few.

Ulavacharu chicken and mutton biryanis, an interesting blend of homemade ulavacharu (thick brown sauce derived from horse gram cooked overnight) are among the highlights.

Its time to get high on biryanis of Persian, Arabic, Afghani, Mogolian, Hyderabadi, Rampuri, Lucknowi and Kashmiri origins which are sure to stimulate your taste buds.

One need not be a foodie to go berserk and let himself loose on the luscious spread as the divine taste continues to linger on for a long time.

While you indulge in this sumptuous spread of exotic and authentic recipes packed with lovely aromas and delectable tastes at Aromas, the coffee shop, Springs, on the ground floor invites you for an exhilarating experience by hosting an exciting ice creams and shakes' festival - Coolers and Shakers. Enliven your spirit with cool treats like the Humpty Dumpty, Thunder Night, Dance with the Lady, Sapota Napota and Golden Glory.

Food wise

"The gap was well planned," explains Rajesh Berry, the general manager who is never flustered over the kind of recipes his customers would like to savour during vacation. You are what you eat. A gourmet meal can make you feel good and help you switch over to the right mood. Choose your food wisely for it actually improves the mood factor.

At Aromas, it is not only the raging appetite that makes the food seem so full of flavour and goodness but, the way in which it is cooked. No wonder then that the biryani delicacies at the fare do so much to the heart while filling your stomach.

Realising that students are gearing up to let down their hair and chill out during vacations, Berry decided to help them unwind in style.

"We did not want to distract the children during examinations and so we have decided to wait for them," says a beaming Berry inviting them to have a feel of the new thrills offered by the hotel.

Quail butter masala biryani is yet another lip-smacking addition that awaits food connoisseurs. "For the first time, we have introduced quail butter masala biryani. This is nothing but quail cooked in butter, long grain basmati rice and exotic condiments," explains the chief chef, Brijesh Thakur. In the Coolers and Shakers' section, fascinating names like nude dude (split banana topped with scoop of chocolate, strawberry and vanilla ice creams), Bay watch (peaches topped with vanilla ice cream and Melba sauce, purple passion (black currant cordial with vanilla ice cream and topped with lemonade) and Lady in Pink (water melon milk shake with vanilla ice cream)have caught the fancy of teenagers.

Whiz up these inspired and lovely treats with ease and create a buzz that becomes the lively summer spirit. No other gourmet dish or a soft drink can keep you on your toes so well. So, dig into the new flavours and have a blast!
