Cake mixing

Visakhapatnam

Days ahead of Christmas the cake mixing ceremony begins. Guess what the aromatic mixture contains? Tutti-frutti, black currants, dates, apricots, figs, cherries and walnuts along with a whiff of the choicest spices — cardamom, cinnamon and cloves. Dry fruits are soaked in wine and grape juice, and kept for maturation for a few weeks. Freshly ground nutmeg, cinnamon cardamom, cloves and mace are added and the mixture is tossed till all the fruits and nuts are well coa ted. The mixture is emptied into large vat like containers and stored away till just a couple of days before Christmas. The mixture goes into the preparation of plum puddings.
